Matcha Pastry Cream 

 

Ingredients

  • 500g whole milk

  • 1 tsp vanilla bean paste

  • 6 egg yolks, large

  • 90g granulated sugar

  • 30g cornstarch

  • 24g DIRTEA Matcha

  • 40g unsalted butter, cold

 

Directions

  1. In a saucepan, combine milk and vanilla. Heat on medium until steam appears, then turn off the heat.

  2. In a bowl, whisk together egg yolks, sugar, cornstarch, and DIRTEA Matcha until smooth.

  3. Slowly pour the hot milk into the yolk mixture while whisking, then return everything to the saucepan.

  4. Cook over medium heat, stirring until thick and custard-like. Remove from heat and mix in the butter.

  5. Strain if lumpy, then cover with cling film and let cool to room temperature before chilling for at least 4 hours.

 

Matcha Doughnuts

 

Ingredients

  • 7g active/instant dry yeast

  • 25g granulated sugar

  • 140g milk (room temperature)

  • 280g strong bread flour

  • 24g DIRTEA Matcha

  • 1 large egg (room temperature)

  • 30g unsalted butter (softened)

Directions

  1. In a small bowl, whisk yeast, sugar, and milk. Let activate until foamy.

  2. In a stand mixer, combine flour and matcha, then add the wet mixture and egg.

  3. Mix until combined, then knead for 5 minutes. Add butter and continue kneading until smooth and elastic.

  4. Place dough in a greased bowl, cover, and let rise until doubled (about 1 hour).

  5. Punch down, divide into 8 pieces (~70g each), and roll into balls.

  6. Proof again for 25–30 minutes.

  7. Fry or air fry until golden, then coat in sugar.

  8. Pipe in the chilled matcha pastry cream - and enjoy immediately.
